Paleo-Inspired Chicken Divan Recipe
This Paleo-inspired Chicken Divan skips most of the dairy and grains while keeping the dish delicious, creamy, and nutritious.
Ingredients:
• 2 cups cooked chicken breast, shredded or cubed
• 3 cups fresh or frozen broccoli florets
• 1 can (13.5 oz) full-fat coconut milk
• 1 cup chicken broth (I use bone broth)
• 1 cup shredded cheddar cheese (for dairy-free, use 3 tablespoons nutritional yeast instead)
• 2 tablespoons arrowroot starch or tapioca starch (for thickening)
• 2 tablespoons Dijon mustard
• 2 tablespoons lemon juice
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• Salt and pepper to taste
• ¼ cup almond flour or gluten-free breadcrumbs (optional, for a crispy topping)
• 2 tablespoons olive oil or melted coconut oil (if using almond flour topping)
Instructions:
1. Preheat the oven to 375°F (190°C).
2. Steam the broccoli florets until tender-crisp (about 3-4 minutes if using fresh). Drain and set aside.
3. In a medium saucepan over medium heat, combine the coconut milk and chicken broth. Bring to a gentle simmer.
4. Add the cheese (or nutritional yeast for dairy-free), Dijon mustard, lemon juice, garlic powder, onion powder, salt, and pepper. Stir until everything is well combined.
5. Thicken the sauce by whisking in the arrowroot or tapioca starch, dissolved in about 2 tablespoons of cold water. Stir until the sauce thickens, then remove from heat.
6. In a large bowl, combine the cooked chicken and steamed broccoli. Pour the sauce over them and mix until everything is evenly coated.
7. Transfer the mixture into a greased 9x13-inch baking dish.
8. For an optional crispy topping, combine the almond flour and olive oil (or melted coconut oil) in a small bowl. Alternatively, use gluten-free breadcrumbs. Sprinkle the mixture evenly over the casserole.
9. Bake for 25-30 minutes, or until the casserole is bubbling and the top is golden brown.
10. Let the dish cool for a few minutes before serving.
