Christmas Crepes

Merry Christmas to you and yours!! Emma is anxiously awaiting Santa…two more days! Mama is anxiously awaiting skiing haha.

This morning, Emma requested crepes for breakfast (she prefers mine over the fancy ones at a restaurant). We have been making these crepes for YEARS. The recipe is tried, tested and true. Give yourself time though, this is usually a 45 minute process for me, so some spoons will be used up. Yes, they contain a bit of sugar, which in my books is fine for a treat.

Ingredients:

  • 4 eggs

  • 1 cup flour (we use gluten-free)

  • 1/2 cup milk (we use dairy-free)

  • 1/2 cup water

  • 1/2 teaspoon salt

  • 2 tablespoons melted butter

  • 2 teaspoons sugar

  • 1 teaspoon vanilla

Yields 12 crepes

Instructions:

Measure all ingredients except flour into large mixing bowl. Beat with electric mixer on medium speed, gradually adding flour, until all ingredients are combined. If small lumps are present, pour batter into strainer.

Pour 1/2 cup batter into a cast iron pan or use a crepe maker, cook on low. I keep the batch warm as I go in the oven at 225F until ready to serve. Keep in fridge or freeze for later too.

We like to do them the French way…berries, lemon juice, sugar 😳
